Baba ganoush is a dip made of roasted eggplant, and is popular in the Mediterranean countries. It is one of many “small dishes” called mezze, that are served before the main meal, while guests are gathering and socializing.
The Mediterranean way of eating is a very good plan for those with PD. There is little in the way of stripped, high-processed foods, instead foods are mostly locally-grown and of high quality, rich in the minerals, vitamins, and antioxidants so needed to combat PD. Baba ganoush contains roasted eggplant, olive oil, tahini (roasted, ground sesame seeds), garlic, lemon juice, cayenne, and pine nuts. Each ingredient has its own unique nutrient profile.
Eggplant contains valuable phytochemicals including anthocyanins, one of which appears to protect brain cells, and a phenol that fights cancer; and it’s a good source of fiber, as well as minerals.
Extra-virgin olive oil is largely composed of monounsaturated fatty acids, and has antioxidants and anti-inflammatory compounds that fight heart disease and cancer and boost the brain.
Sesame seeds are rich in many minerals, including selenium, which works together with vitamin E as antioxidant.
Pine nuts have vitamin E and K, as well as B vitamins and magnesium and fiber; and the fats are mostly polyunsaturated and monounsaturated.
